Seems kinda pointless to carefully extract those organs just to eat them. Now, if the Dwemer had an automated cyborg factory going, and needed a constant supply of organic material, including whole organs, vials of blood, muscle and brain tissue, ect, then Surgery Spider wouldn't be a bad idea--though a better one would have a dedicated incapacitation-focused combat robot, that supplied bodies to a dedicated medical robot--that way, you're not risking all that hyper-precise and expensive medical equipment in a combat situation.

Then one would wonder why, exactly, they're manufacturing cyborgs. Perhaps they want infiltration/autonomous units to help reclaim things for the city, which implies one of two things--A.) The cities are, if not alive, at least aware enough to actively seek to maintain themselves, or B.) the machines are themselves or are being influenced to seek to reestablish Dwemer dominance in Tamriel.

Only in the physical sense. IIRC, Skyrim werewolves eat the hearts of sentient beings to gain power. Why not goat hearts? Why not other organs and muscle? Because magic.
There could be some magical, alchemical reason to harvest just the organs, or just certain ones, ignoring everything else as waste. The favorable aspect being harvested that much more useful or powerful if the organs are intact and lack any paralyzing or numbing poison in them.
Human hearts and flesh are alchemy ingredients in the game, after all.
Consuming them might capture the metaphysical aspect that is desirable. Then the fleshy chaff could be discarded.

True, but Dwarven magic in Skyrim focuses on outright altering physics via magical mineral artifacts and such--rather than the more naturalistic alchemy, Dwemer constructs outright defy nature.

In fairness, the Dwemer were an exceptionally sadistic people. I could picture them making something like that just because, y'know, "wouldn't it be funny to release thousands of these things?"

Um, derpibooru is always a good place if you don't mind filtering through tons of meh stuff, once you've found some good pics find the artist back-track them to their personal sites, that's what I do usually.
