They pass onto the Celestial Realm which Celestia and Luna can enter and leave at will, hence the missing Luna of Season 1. She was meeting all the ponies she had missed in those thousand years.

Dunno really, religion was never discussed there.
I'm sure that the Ponies could ask Celestia or Luna, they had a lot of time and even motivation to study the subject.

I personally believe in reincarnation, one life is simply too short to experience and learn everything important.

There are, in the show references to dead ponies like those of the pre-classical era and the civilization wiped out by the cutie pox, so if it were reincarnation, it would be similar to a Hindu or Buddhist belief in that respect. The Phoenix breaks all those laws... The Phoenix I think could be compared to the Time Lord. Through regeneration they can live infinitely, but they are not immortal. Time Lords can die, and I think this works as an analogy to the Phoenix. Dr. Whooves logic right there.Of course, reincarnation is not the only possibility. I think the Celestial Realm is an equally plausible explanation in that respect. However, unless Lauren Faust or one of her writers decides to write an explanation for this I'd say we can't possibly know for sure. Keeping in mind of course it's cartoon ponies so it doesn't necessarily matter, but hay, I love them too, and it's fun thinking about these things ^-^

They get sent into a pure white realm were they can create whole towns and cities or other ponies that are not exactly the full pony but a somewhat AI.

Indeed, very fun. Philosophic stuff like this is always fun.
I think there are tons of things not accounted for simply because the creators didn't expect this kind of fandom that would notice and further discuss topics like this.

However, since even we are not certain what happens after death I think it would be better to metion something from the religious and/or philosophical perspective rather than specifying it too much. Leaves freedom for discussion and even opens new topics of Pony religion.
Not sure if they should mess with religion though, some people take it way too seriously sometimes.
