For the valentines episode:
1) Big Mac will say more than 'Eeyup' and 'nnope'
2) The lesson will be that love is something that cannot be forced, it has to grow on it's own and takes time.
Pinkie's next episode:
1) SMILE SMILE SMILE!
At some point in season 3:
1) CMC's finally get their cutiemarks
2) They announce season 4
That's all I got for now...

My predictions are
1. We see more derpy in backgrounds shots.....alas no more speaking for her (probably).
2. Another Luna episode, showing how she’s coping with no more nightmare moon.
and 3. More fan creations made into cannon.

For Putting Your Hoof Down, it'll probably start with a fight between the mane 6, in which Fluttershy is trying to be the voice of reason. The fight will end and everyone, or just Rainbow Dash, will start blaming Fluttershy fr not speaking up. This will lead her to seek the help of Iron Will, who is a pony mr. miyagi. There will be a montage somewhere, and the letter will be about speaking up for yourself.

predication for hurricane fluttershy......she gets to agressive and loses it and starts throwing bunnies at people, like the crazy cat lady in simpsons,or will that be rarity.
